Parts Of The Ship Outdoor Parts

Le castagnole…

In this carnival period, there are many recipes that I want to prepare, frappe, strufoli, donuts, but in the end always decide for the magic crackers. This year, my attention turned to those made by my friend Fabrizio de "The Esterina" so inviting that I decided to try his version. The crackers are a classic for many Italian regions, in the typical Roman cuisine are simple ones, the ones to be clear without filling, fried and wrapped in sugar.

INGREDIENTS
  • 250 g. 00 flour
  • 2 eggs
  • 50 g. granulated sugar
  • 40 g. butter
  • ½ packet of yeast
  • 1 teaspoon of vanilla extract
  • grated rind of one lemon
  • a pinch of salt (not)
  • half cup of RUM
  • Peanut oil for frying PREPARATION

The process is very simple, put in a bowl the flour, baking powder, vanilla and butter, then add the eggs, lemon zest and RUM. Mix well, until a soft dough. Let rest for at least 30 minutes in the refrigerator wrapped in plastic wrap. Then take the dough, roll it out to obtain cylinders of about 2 cm in diameter, after being chopped into small pieces (not too large), roll them between your hands until you get the ball. Fry in abundant oil, peanut oil, drain on paper towels and stored. Finally, wrap the crackers with sugar.
Good carnival.
